About the Course

Who should attend this course?
The qualification is aimed at food handlers and other staff involved in food service and preparation within the catering industry.

What does the course involve?

The qualification is designed to provide knowledge and understanding of food allergens and foods that commonly cause intolerances, their characteristics and effects. The course covers the importance of communicating information regarding allergenic ingredients to customers and how staff can minimise the risk of cross-contamination from allergenic ingredients.

During this one day course candidates will learn all they need to know to successfully complete the multiple-choice examination at the end of the day.

Course overview:

  • Understand characteristics and consequences of food allergies and intolerances.
  • Understand procedures for identifying and controlling contamination and allergenic ingredients.
  • Understand procedures for the accurate communication of allergen information to consumers.
  • Symptoms of allergic reactions and food intolerances.
  • Common food allergens and foods causing intolerances.
  • Allergic cross-contamination hazards and controls.

How is the course assessed?

Candidates take a multiple choice examination at the end of the day. On successful completion of the examination candidates achieve Highfield Awarding Body accreditation and certification.

Going to be honest here but this apprenticeship has been the best thing I have ever done, going from applying for jobs and getting nothing, but then going into an apprenticeship and coming out with so much. I have my personal license which I got through my pre-apprenticeship course, I have peoples comments about me on trip advisor, an article in the journal paper which says I am “the most extensive and ambitious waiter I have ever been served by”. Now to have someone say that about you is just absolutely brilliant. However I wasn’t always good at what I do, on my first shift my boss said could you carry some wine and well I’m rather clumsy but said yeah, took two steps and covered myself in wine and dropped the whole tray, but now I can carry loads of wine on my hand and not spill any off it.
